Umak od crvenog vina poznat i pod nazivom Bordelaise umak, bogat je i ukusan umak pripremljen od reduciranog goveđeg temeljca, vinskog octa, luka, maslaca i ključnog sastojka – crnog vina. Ime Bordelaise je dobio po francuskoj regiji Bordeaux koja je poznata po svom vinu. Tradicionalno, Bordelaise umak se poslužuje uz govedinu ili odrezak na žaru, iako se može poslužiti i s drugim vrstama mesa koje se dobro slažu s umacima na bazi crnog vina.
