Pistacia vera

Pistachios are the fruit of a low shrub or small tree belonging to the cashew family (Anacardiaceae) native to southwestern Asia (Syria). Pistachio trees, with their wide, dense, and spherical canopy, can reach heights of up to 8 - 10 meters and live for over 100 years. According to Turkish archaeological findings, it has been cultivated for consumption for over 9000 years.

The pistachio fruit is a drupe or nut, measuring 1 to 2 cm in diameter and 2 cm wide. It is covered by a soft beige-colored husk that opens slightly as the fruit ripens. Inside the husk is the greenish edible seed.

Unsalted pistachios contain healthy fats and are a good source of protein, fiber, and antioxidants. They are also rich in vitamin B6 and potassium, which are essential for proper heart function and blood clotting. Pistachios contain more antioxidants than most other nuts and seeds, second only to walnuts and pecans.

Pistachios are exceptionally delicious and are widely used in culinary applications. They can be enjoyed as a snack, used in sauces, in the making of cakes and other sweets, in ice cream production, or as a garnish. They are also used in the preparation of savory dishes such as salads, bread, and other bakery products.
