Baked kale with walnuts and parmesan cheese

Ingredients:
- 1 middle-sized kale
- olive oil Harissa
- 1tsp salt
- freshly ground black pepper
- 1 tsp za'atar
- or 1 tsp Cafe de Paris spice blend
- 1/2 cup whole walnuts
- 1 big organic lemon
- 2 garlic cloves
- chili flakes
- ground parmesan
Preparation:
- Heat the oven to 180 degrees, clean the kale from the outer, damaged leaves and cut it into 10 larger pieces/cuts.
- Line a baking tray with paper and sprinkle with olive oil. Arrange the kale in a single layer and drizzle or coat it with olive oil. Then add salt, pepper and season with za'atar or Cafe de Paris seasoning.
- Place in the oven and bake for 8 to 10 minutes until the tops are lightly browned. Take out and turn each piece over with a spatula and continue baking for another 5 minutes.
- While the kale is roasting, lightly toast the walnut halves in a pan for 4 to 5 minutes. Move them to a cutting board and roughly chop them.
- Mix the walnuts in a bowl with the grated zest of half a lemon and finely chopped garlic. Add a little olive oil, a little salt and chili flakes to taste. Mix everything and at the end add the juice of half a lemon.
- As soon as you take the kale out of the oven, add your walnut pesto with a teaspoon and grated Parmesan cheese over everything. Serve immediately, while still hot.
