Creamy Carrot Soup

Ingredients:
Preparation:
  1. Warm the olive oil in the pot in which you will prepare the soup. Add chopped onions and salt and fry for a few minutes.
  2. Clean and grind the carrots or chop them finely. Add them to the pot with the onions and fry together.
  3. Pour water or stock over it and cook it covered with a lid for about 15 minutes.
  4. When the carrots are cooked, blend it all with a hand blender.
  5. Add the ginger, and lemon zest and cook briefly.
  6. At the end, add the cooking cream and serve it hot. For an extra kick, sprinkle the soup with chili flakes!
